Looking at at the credits for Hobbit 2 at the IMDb, I see that Andy Serkis gets a credit as Gollum. This might just be inertia from the last film, or a flashback, but there might be another possibility.

In my opinion and that of many others, Gollum's scene in Hobbit 1 was the high point of the film, and it's a pity that he's (nominally) not in the following two movies. But, do recall, Gollum eventually leaves his caves in search of Bilbo and the Ring. After dithering back and forth, he ends up in the hands of the Elf-King in Mirkwood. (At the Council of Elrond in LotR, Gloin makes a fairly dark comment about how Gollum got better treatment in the elf dungeons than he did.) I think, in the books, this doesn't happen for years, but maybe things get sped up in the movies? Perhaps Gollum is hot on the dwarves' tails as they enter Mirkwood...?

That would involve some serious messing with the timeline even for Peter Jackson, as Gollum had been captured by Aragorn and interrogated by Gandalf before being handed over to Thranduil's people. This is how Gandalf found out that Gollum had revealed Bilbo's name and location to Sauron under torture, causing him to high-tail it back to the Shire to warn Frodo.

That said, I can't imagine Jackson being willing to drop a character like Gollum after the first film, so I wouldn't be surprised to find him sneaking about somewhere.
